Okay, first things first.
After reading your banter comments on my blog lately, it appears that you three ladies have somewhat of a competitive spirit about you. A little healthy competition can be good in bloggy land. So, I’m going to try to get creative and think of a little bitty contest for you three ladies to see who is the best of the best. Numero Uno. The bomb. Give me some time on this one, but start preparing for the contest. I’m talking about preparing Rambo IV style. Oh yea – this is gonna be good!
And just so there isn’t any complaining about the order I did the names – it was done alphabetically!
Second.
I found me a yummy new dessert recipe last week and tried them over the weekend for Hubby’s step dad’s birthday and if I do say so myself – scrump.dilly.umptious!
What were they?
Cake Pops. Some refer to them as Cake Balls (including my hubby), but that’s just disturbing, so I prefer Cake Pops.
I originally saw them on Paige’s blog and she had the link to MckMams’s blog for the recipe. I’ll go ahead and give you the recipe here!
CAKE POPS
Okay, so you have to use a cake mix (usually taboo in my kitchen, but those were the rules of the recipe). Buy a cake mix, whatever flavor you want and bake it according to directions on box.
Allow to cool and then cut into sections and use a food processor or blender to chop it all up. Or you could do what I did and put them in plastic bags and just manhandle them like crazy and you get the same affect. When kids are sleeping and kitchen appliances can’t be used, you do what you can!

Then put the crumbs in a large bowl and add home made cream cheese frosting – about one cup. Here is the recipe for the frosting (which makes more than a cup, but just use a cup of it):
8 oz. package of cream cheese, softened
6 tbsp. real butter, softened
1 tsp. vanilla
1 tbsp. heavy cream or milk
3 cups powdered sugar
Add the frosting 1/2 cup at a time with a wooden spoon or spatula until all the crumbs are moistened (again, about 1 cup). You don’t want to add too much or the dough will be way to soft and they won’t stick on the lollipop sticks.
Once this is combined, form the mix into little balls and refrigerate to chill. I let them chill for about an hour so they weren’t too soft.
Before removing from the fridge, melt chocolate chips (flavor of your choice) or chocolate candies. If you are using white chocolate you can also add coloring to make them purty! Remove the little cake balls (there I go calling them that) and insert the lollipop sticks into the center. Pick them up by the stick and dip them in the chocolate. Immediately put sprinkles on them if you are doing that (before the chocolate dries) and set them up to cool. Paige used a Styrofoam cup. I didn’t have any of those, so I took my cooling rack and placed it over the sink and I had me an instant cake pop drier!
Voila! Cake Pops!
Then I put them in a jar filled with peanut M&M’s and tied some ribbon around the mouth of the jar. Yummm!
So, there you go! It’s time for me to go to bed. I haven’t felt so hot the past couple days and I need some sleep! Cake pops are a lot of fun. I also saw a recipe for them on Bakerella.com which was awesome too. She has the best site and everything on there is perfection!

I love those cake pops. I so wrote "cake balls" just now and went back and changed it to cake pops....LOL!!! Those are really cute though. I've never seen them as lollipops before and I love that. It would be really cute to do for the girl's birthday parties.

Okay, no, no, no, no. They're just getting regular cupcakes. That sounds like way too much work. Maybe for a birthday or other special occasion, but I'm feeling too lazy to do that today. ;)

Kari brought over 4 of them, two for me and two for her dad. They were so good that I was mad at her dad for eating both of his because I wanted one of his plus my two for myself. Maybe my daughter will make some more for us. Hint. Hint.
