Delayed. Denied.

Well, wouldn't you know that I was in the midst of getting my new design transfered to my blog and my laptop decides to flip out.  After it took over an hour to do something that should have only taken maybe 10 minutes - I'm stopping and waiting until tomorrow night.

Frustrated. 

Grrrr.

So - I shall try again tomorrow.  Hubby is trying to figure out why my laptop is being silly.  Well, more like annoying!

Tomorrow it is.  I'm off to read and sleep!

Working On It

My new blog design is just about ready.  I’m hoping I can get it loaded up tonight.  I haven’t done a post since Sunday –but I’ve been trying to get this done and off my plate!

So, when you wake up tomorrow morning or if you’re one of those night owls, keep watch for my new look.  Maybe this one will last for at least 2 weeks before I want to change it again!

I have had a couple cool opportunities come to me this week – due to being a blogger.  I’ll fill you in on those.  I’d like to have some down time this week (she says laughing – haha).  I haven’t had much of that for over a week now.  It’s time.

The kids and I had a fun time today with Melissa, Sofia and Brooker.  You all know Melissa – my friend for like 24 years now!  We had fun watching the kids make a huge mess, play, have a picnic on the family room floor – and of course us mom’s had fun talking, drinking tea, eating cookies and running after our little boys :o)

Here we are with last weeks photos.  We had a great snow storm and I got some really fun shots of the snow.  We were able to get outside a couple times – in spite of the snow.  That’s what’s wonderful about Colorado.  It gets warm, sunny and melts the snow the very next day!  We’re definitely ready for warmer weather around here.  The kids absolutely enjoy being outside.  So does puppy!  I also got me a new lift on my Land Rover!  It’s pretty cool.

I Got A Lift

A face lift?

Nope.  I hear that’s addictive and I like the fact that my face moves when I talk.

A Brazilian Butt Lift?

Yeah right!  I’m already blessed with some extra baggage in the rear naturally,  I don’t need anyone pumping fat into me to give me a little bigger booty!

So, what kind of lift did I get?

Well, I didn’t get a lift – but my Green Disco did.

Yep!  My girl is now 3” taller than she use to be.  May not seem like a lot, but when you’re short like me.  It’s a lot.

 
 
This is how she use to look.  Sad looking tires.  Low to the ground.  Not manly at all.  Well, not for a Land Rover that is.

Granted I can’t get in easily at all.  That’s what happens when you’re vertically challenged like I am.

I’m considering a spring board.  Or maybe a rope ladder that drops out when I open the door.  It’s a fun time watching me try to bounce into the driver’s seat.

Getting Scout in is more like a game of basketball.  He’s the ball and the car seat is the basket.  Just toss him up and hope he lands.

I should get a pic of me next to it.  The bumper is almost as high as my hips.

So – there you go.

I got a lift!  A cool lift.

And maybe some of you out there are frowning on my gas guzzling SUV type vehicle.  Sorry, but you must not know what it’s like to live in Colorado where you can get snow 9 months out of the year.  When you encounter a storm like we had on Tuesday night, you’d better hope that your only vehicle isn’t one of these:

Seriously, you wouldn’t even make it out of your driveway, let alone a mile down the road.  And for those of you who don’t know (Paige knows, though) – Colorado does not shut down when it snows like some cities.  Nope.  It takes at least 4 feet of snow to do that.  We did get that back in March of 2003!  But 1-2 feet of snow is nothing and business goes on as usual.  So, you will need a vehicle that can actually drive in, through and on top of snow.  Not seeing the little Smart Car making much progress on the snowy, slushy, iced over Colorado roads!

And, thanks to my new lifted, gas guzzling Green Disco:


1.  We were able to make it home safely Tuesday night after our meeting at church.  It took us an hour because you had to drive so slow due to the extremely slick roads, but we got home safely and we were all safe, including our children.

2.  We were able to pull 3 people out of the snow that night – stuck in ditches and what not.

3.  We saved those 3 people the cost of calling a tow truck to get them out of ditches and unstuck from the deep, wet snow.

4.  We saved those 3 people the possibility of being stranded late at night in a cold vehicle – which could have proven dangerous!


So, I’m thankful for my Green Disco, not matter how much gas it takes.  Besides, I pay for the gas – not you, so no worries.  And now I sit a little taller (no pun intended) since she got her little makeover (thanks to Hubby)! 

It’s fun trucking down the road in my tall Land Rover Discovery aka The Green Disco, huge tires and my Mountain Midwifery sticker on the back window!

Crazy Nutter Butter Peanut Butter Dessert

Okay, before I post my recipe from last week I wanted to tell all of you that I sort of got my first ‘client’ as a Wellness Coach.  I am doing it ‘pro-bono’ (at my suggestion) and am excited to learn from this.  It’s amazing to actually be excited to work – haha!  I’ll be helping a family with their 12 year old son who is border lining obesity for his age.  This will entail lots of research on my part, but the main focus will be on nutrition and exercise.  I think this will be a great learning experience for me!  I also have a few names I’m tossing up in the air for my business and when I narrow them down, I might get your vote on what you like!

Now, onto sugar.

For those who are aware of my passion for baking and preferably baking from scratch – this isn’t a recipe I might normally use.  Why?  Because most of it is fake food!  You know, pre processed food!  Yep.  I usually like to bake from scratch, but since my dad is addicted to peanut butter this looked like something he would like – and he did.  Immensely.

As for the recipe, something was brought to my attention when preparing this dessert.  BLOGGERS when you are posting recipes, make sure your written out directions match the list of ingredients.  I’m not sure where I got this recipe, but it was from a blog a while back.  When I went shopping I used the list of ingredients she had.  Then as I was preparing it following her written out instructions – you needed about 1 cup more peanut butter then she had listed.  Good thing I had bought two containers while I was there.

CRAZY NUTTER BUTTER PEANUT BUTTER DESSERT

You will need:

2 1/2 cups of milk

1 small box of Chocolate instant pudding

1 small box of Vanilla instant pudding

1 package of Nutter Butter Cookies

1/2 cup semi-sweet mini chocolate chips

2 twelve ounce containers of Cool Whip

1 cup peanut butter

1 bag mini Reese Peanut Butter Cups – chopped

This is what you need to do:

Chop the mini peanut butter cups and set aside.

Crush 10 Nutter Butter Cookies and set aside.

Take 6 oz. of Cool Whip and put it in a bowl.  Add the box of Chocolate Instant Pudding, 1 1/4 cups of milk, 1/8 cup of the mini chocolate chips and 1/2 cup of peanut butter.  Mix well.

Take 6 oz. of Cool Whip and put it in another bowl.  Add the box of Vanilla Instant Pudding, 1 1/4 cups of milk and 7 crushed Nutter Butter Cookies.

Take the remaining 12 ounces of Cool Whip and add 1/2 cup peanut butter.  Mix well and set aside.

To assemble:

Using a cake pan, glass is better, separate enough cookies to layer on the bottom of the dish – centers facing up. 

Once the bottom layer is down, spread the Vanilla Pudding mixture on top. 

Take the 10 crushed cookies and spread over top of the pudding mixture. 

Then spread the Chocolate Pudding mixture on top of the crushed cookies.

Then spread the Cool Whip/Peanut Butter mixture on top of that.

Now, sprinkle the crushed peanut butter cups and mini chocolate chips over the top.

Chill for at least 3 hours before eating and store covered in the refrigerator.

There you go.  It’s a pretty sweet dessert.  I did like it.  Her recipe called for sugar free pudding mixes and Cool Whip Lite – but I steer clear of all sugar free and fat free products.  They are worse then eating the regular item.  Since it’s sugar free or fat free you should see what extra junk they add to it to make it taste decent.  So – I used regular instant pudding and I always use the thick and creamy Cool Whip.

As for THE CONTEST, I think I’m sticking with my original response that if we want to determine a valid winner, we will have to do a bonus question since Julie missed a question and Brandi copied answers :o)  You girls make me laugh.  You made all of us laugh.  I will say this though:

Julie – your confidence is justified.  You are good!  You are fast!  You are detailed!  I’m very impressed.  Do you have a photogenic memory by chance?  Either you are lightening fast or you used the little search box that is amazing for finding stuff.  I SO liked that you put dates by the answers.  That is something I would do :o)

Brandi – I admire you for even playing along since you still are having pregnancy / toilet issues.  I don’t know how you do it!  You are awesome and you do know so much about me that is just engrained in your memory.  You are a true stalker :o)  Your twin-ness is justified!

Kimber – I’m with you on laying low since you didn’t feel good.  It’s not fun.  I did that all last week and the last thing I wanted to do was be on the computer.  I hope you and your kids are feeling better.  Good health is a beautiful possession!

Everyone have a great day.  Doing lots of baking and cooking today and we have a meeting at church tonight and they are serving us a full course dinner.  I’m excited!  Last week at the meeting they had the most amazing spread of appetizers and desserts and I felt crummy so I couldn’t enjoy any of it.  Not even the shrimp cocktail!  No fair!

Enough Of That

Seriously.  I’m done bawling and squalling over not having a great week last week and feeling yucky for so long.  I know it happens, but I’m sure you all don’t want to hear about it all week!

So…anyhoodle!

It’s nice to be back to feeling good and to have a houseful of healthy people again!  I realized this weekend as I was getting things done that I got quite behind last week on everything.  I’m usually a tad behind anyway, but now I’m about 5 days behind the normal behind

Nice.

So, it’s spring break this week for my darling Bella and of course we have lots going on.  Tomorrow we’ll be gone for most of the day, so I’m posting this early because I needed to get the final questions for THE CONTEST posted before I left!

If things go as planned this week (I’ve learned that I may have to be more flexible with my concrete schedule. Ugh) then I’ll post that recipe for the ‘Nutter Butter Craze’ dessert I made my dad.  I need to get my freaky eye video recorded and on here.  AND I think we’re going to be discussing swimsuit season.  Not my favorite topic, but you gotta do what you gotta do, right?

Oh yeah, before I post the final questions, a little random chat….I was cleaning out a dresser that has been in our basement since we moved in here and I found me some drug paraphernalia along with some Victoria’s Secret tags inside the drawers.  Hmmm.  Disturbing to say the least.  That sucker got sanitized pretty thoroughly, I tell you what!
