Okay, before I post my recipe from last week I wanted to tell all of you that I sort of got my first ‘client’ as a Wellness Coach. I am doing it ‘pro-bono’ (at my suggestion) and am excited to learn from this. It’s amazing to actually be excited to work – haha! I’ll be helping a family with their 12 year old son who is border lining obesity for his age. This will entail lots of research on my part, but the main focus will be on nutrition and exercise. I think this will be a great learning experience for me! I also have a few names I’m tossing up in the air for my business and when I narrow them down, I might get your vote on what you like!
Now, onto sugar.
For those who are aware of my passion for baking and preferably baking from scratch – this isn’t a recipe I might normally use. Why? Because most of it is fake food! You know, pre processed food! Yep. I usually like to bake from scratch, but since my dad is addicted to peanut butter this looked like something he would like – and he did. Immensely.

As for the recipe, something was brought to my attention when preparing this dessert. BLOGGERS when you are posting recipes, make sure your written out directions match the list of ingredients. I’m not sure where I got this recipe, but it was from a blog a while back. When I went shopping I used the list of ingredients she had. Then as I was preparing it following her written out instructions – you needed about 1 cup more peanut butter then she had listed. Good thing I had bought two containers while I was there.
CRAZY NUTTER BUTTER PEANUT BUTTER DESSERT
You will need:
2 1/2 cups of milk
1 small box of Chocolate instant pudding
1 small box of Vanilla instant pudding
1 package of Nutter Butter Cookies
1/2 cup semi-sweet mini chocolate chips
2 twelve ounce containers of Cool Whip
1 cup peanut butter
1 bag mini Reese Peanut Butter Cups – chopped
This is what you need to do:
Chop the mini peanut butter cups and set aside.
Crush 10 Nutter Butter Cookies and set aside.
Take 6 oz. of Cool Whip and put it in a bowl. Add the box of Chocolate Instant Pudding, 1 1/4 cups of milk, 1/8 cup of the mini chocolate chips and 1/2 cup of peanut butter. Mix well.
Take 6 oz. of Cool Whip and put it in another bowl. Add the box of Vanilla Instant Pudding, 1 1/4 cups of milk and 7 crushed Nutter Butter Cookies.
Take the remaining 12 ounces of Cool Whip and add 1/2 cup peanut butter. Mix well and set aside.
To assemble:
Using a cake pan, glass is better, separate enough cookies to layer on the bottom of the dish – centers facing up.
Once the bottom layer is down, spread the Vanilla Pudding mixture on top.
Take the 10 crushed cookies and spread over top of the pudding mixture.
Then spread the Chocolate Pudding mixture on top of the crushed cookies.
Then spread the Cool Whip/Peanut Butter mixture on top of that.
Now, sprinkle the crushed peanut butter cups and mini chocolate chips over the top.
Chill for at least 3 hours before eating and store covered in the refrigerator.

There you go. It’s a pretty sweet dessert. I did like it. Her recipe called for sugar free pudding mixes and Cool Whip Lite – but I steer clear of all sugar free and fat free products. They are worse then eating the regular item. Since it’s sugar free or fat free you should see what extra junk they add to it to make it taste decent. So – I used regular instant pudding and I always use the thick and creamy Cool Whip.
As for THE CONTEST, I think I’m sticking with my original response that if we want to determine a valid winner, we will have to do a bonus question since Julie missed a question and Brandi copied answers :o) You girls make me laugh. You made all of us laugh. I will say this though:
Julie – your confidence is justified. You are good! You are fast! You are detailed! I’m very impressed. Do you have a photogenic memory by chance? Either you are lightening fast or you used the little search box that is amazing for finding stuff. I SO liked that you put dates by the answers. That is something I would do :o)
Brandi – I admire you for even playing along since you still are having pregnancy / toilet issues. I don’t know how you do it! You are awesome and you do know so much about me that is just engrained in your memory. You are a true stalker :o) Your twin-ness is justified!
Kimber – I’m with you on laying low since you didn’t feel good. It’s not fun. I did that all last week and the last thing I wanted to do was be on the computer. I hope you and your kids are feeling better. Good health is a beautiful possession!
Everyone have a great day. Doing lots of baking and cooking today and we have a meeting at church tonight and they are serving us a full course dinner. I’m excited! Last week at the meeting they had the most amazing spread of appetizers and desserts and I felt crummy so I couldn’t enjoy any of it. Not even the shrimp cocktail! No fair!
